Spiced Apple Oat Balls

Ingredients
  

2 cups rolled oats

1 cup unsweetened applesauce

1 large apple, finely grated (preferably a sweet variety like Fuji or Gala)

1/2 cup almond butter (or peanut butter)

1/4 cup honey or maple syrup

1 teaspoon cinnamon

1/2 teaspoon nutmeg

1/2 teaspoon ginger powder

1/4 teaspoon salt

1/2 cup chopped nuts (walnuts or pecans)

1/2 cup raisins or dried cranberries

Optional: 1/4 cup dark chocolate chips for extra sweetness

Instructions
 

Preheat and Prepare: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper for easy cleanup.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, cinnamon, nutmeg, ginger powder, and salt. Stir until well mixed.

      Combine Wet Ingredients: In another bowl, whisk together the applesauce, almond butter, and honey (or maple syrup) until smooth.

        Grate the Apple: Grate the apple using a box grater or food processor. Squeeze out any excess liquid to avoid a soggy mixture, then add it to the wet ingredients.

          Combine Mixtures: Pour the wet ingredients into the dry mixture. Stir until just combined. Fold in the chopped nuts and raisins (or dried cranberries) and, if using, the dark chocolate chips.

            Form the Balls: Use your hands to roll the mixture into small balls, about 1-2 inches in diameter. Place them onto the prepared baking sheet, leaving some space between each ball.

              Bake: Bake in the preheated oven for 15-20 minutes or until the balls are golden brown and firm to the touch.

                Cool and Serve: Remove from the oven and let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

                  Store: Enjoy immediately or store in an airtight container in the refrigerator for up to one week. Can be eaten cold or warmed up in the microwave.
