Spicy Cauliflower Air-Fried Tacos

1 medium head of cauliflower, cut into florets

1 cup all-purpose flour (or gluten-free flour)

1 cup buttermilk (or plant-based milk)

1 cup panko breadcrumbs

1 tbsp smoked paprika

1 tbsp garlic powder

1 tsp cayenne pepper (adjust to taste)

1 tsp ground cumin

1/2 tsp salt

1/2 tsp black pepper

2 tbsp olive oil

8 small corn tortillas

1 avocado, sliced

1 cup shredded red cabbage

1/4 cup fresh cilantro, chopped

Lime wedges for serving

Optional: Hot sauce for extra spice

Prep the Cauliflower: Start by preheating your air fryer to 400°F (200°C). In a large mixing bowl, combine the flour, smoked paprika, garlic powder, cayenne pepper, cumin, salt, and black pepper. Whisk until evenly mixed.

    Coat the Cauliflower: Dip each cauliflower floret into the buttermilk, ensuring it is coated well. Then, dredge it in the seasoned flour mixture, shaking off any excess. Finally, roll it in the panko breadcrumbs to create a crispy coating.

      Air Fry the Cauliflower: Lightly spray the air fryer basket with olive oil. Place the coated cauliflower florets in a single layer in the basket (work in batches if necessary).
