Spicy Green Chili Beef Quesadillas

1 lb ground beef

1 cup diced green chilies (fresh or canned, mild or hot depending on your preference)

1 small onion, finely chopped

2 cloves garlic, minced

1 tsp cumin

1 tsp smoked paprika

½ tsp cayenne pepper (adjust to taste)

Salt and black pepper to taste

1 cup shredded Monterey Jack cheese

1 cup shredded sharp cheddar cheese

4 large flour tortillas

2 tbsp olive oil (for cooking)

Optional toppings: sour cream, guacamole, salsa, chopped cilantro

Instructions
 

Cook the Beef: In a large skillet over medium heat, add the ground beef and cook until browned, about 5-7 minutes. Break it apart with a wooden spoon as it cooks.

    Add Aromatics: Once the beef is browned, drain any excess fat and add the chopped onion and minced garlic to the skillet. Sauté for about 3 minutes, until the onion is translucent.

      Season: Stir in the diced green chilies, cumin, smoked paprika, cayenne pepper, and salt and pepper. Cook for another 2-3 minutes until everything is well combined and heated through. Remove from heat and let it cool slightly.

        Assemble Quesadillas: On one half of each tortilla, sprinkle a layer of shredded Monterey Jack and cheddar cheese (about ¼ cup each). Then, spoon the beef mixture over the cheese, followed by another layer of cheese on top. Fold the tortilla in half.

          Cook Quesadillas: In the same skillet, heat 1 tbsp of olive oil over medium heat. Once hot, place 1-2 quesadillas in the skillet (depending on the size) and cook for about 3-4 minutes on each side until golden brown and crispy. If necessary, add more oil for the second side.

            Serve: Once cooked, transfer quesadillas to a cutting board and let them rest for a minute. Cut into wedges and serve warm with your choice of sour cream, guacamole, salsa, or fresh cilantro on the side.
