Ingredients

1 fresh pineapple, peeled, cored, and cut into 1/2 inch rings

1 tablespoon olive oil

2 tablespoons brown sugar

1 teaspoon chili powder

1/2 teaspoon cayenne pepper (adjust to taste)

1/2 teaspoon cinnamon

1/4 teaspoon salt

Juice of 1 lime

Fresh cilantro, for garnish (optional)

Instructions

Prepare the Marinade: In a small bowl, whisk together the olive oil, brown sugar, chili powder, cayenne pepper, cinnamon, salt, and lime juice until well combined. This marinade will give the pineapple a sweet and spicy kick.

Marinate the Pineapple: Place the pineapple rings in a shallow dish and pour the marinade over them, ensuring that each ring is thoroughly coated. Cover with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to infuse.

Preheat the Grill: Preheat your grill to medium-high heat. If using a charcoal grill, wait until the coals are glowing white. For a stovetop grill, heat on medium.

Grill the Pineapple: Remove the pineapple rings from the marinade, allowing any excess to drip back into the bowl. Place the rings directly on the grill grates. Grill for about 3-4 minutes on each side, or until you see nice grill marks and the pineapple caramelizes.

Serve: Once grilled, remove the pineapple from the grill and transfer to a serving platter. If desired, drizzle any remaining marinade over the top for extra flavor. Garnish with fresh cilantro before serving.

Enjoy: Serve the spicy grilled pineapple rings as a delicious side dish, a topping for burgers, or a sweet treat on their own. Their sweet, spicy flavor will surely impress your guests!
