Ingredients

1 lb large shrimp, peeled and deveined

1 cup fresh pineapple, cubed

2 tablespoons olive oil

2 tablespoons fresh lime juice

1 tablespoon honey

1 teaspoon chili powder

1 teaspoon smoked paprika

½ teaspoon cayenne pepper (adjust for spiciness)

2 garlic cloves, minced

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions

Prepare the Marinade: In a mixing bowl, combine the olive oil, lime juice, honey, chili powder, smoked paprika, cayenne pepper, minced garlic, salt, and pepper. Whisk until well combined.

Marinate the Shrimp: Add the shrimp to the marinade and toss until they are evenly coated. Let them marinate for at least 30 minutes (up to 2 hours if you want more flavor).

Preheat the Grill: Preheat your grill to medium-high heat. If you’re using wooden skewers, soak them in water for about 30 minutes to prevent burning.

Assemble the Skewers: Thread the marinated shrimp and cubed pineapple alternately onto the skewers, leaving a little space between each piece to allow for even cooking.

Grill the Skewers: Place the skewers on the grill and cook for about 2-3 minutes on each side, or until the shrimp turns pink and opaque, and the pineapple is caramelized with grill marks. Avoid overcooking the shrimp to maintain their tenderness.

Serve: Remove from the grill and sprinkle with freshly chopped cilantro. Serve with lime wedges on the side for squeezing over the top.

Enjoy: Serve your spicy grilled pineapple shrimp as an appetizer or over a bed of rice for a complete meal.
