Spicy Honey Garlic Shrimp with Rice

Ingredients
  

For the shrimp:

1 pound large shrimp, peeled and deveined

1 tablespoon olive oil

4 cloves garlic, minced

1 teaspoon fresh ginger, minced

1 teaspoon red pepper flakes (adjust to taste)

1/4 cup honey

2 tablespoons soy sauce

1 tablespoon rice vinegar

Salt and pepper to taste

Chopped green onions and sesame seeds for garnish

For the rice:

1 cup jasmine rice

2 cups water

1 tablespoon butter

Salt to taste

Instructions
 

Prepare the Rice:

    - Rinse the jasmine rice under cold water until the water runs clear.

      - In a medium saucepan, combine the rinsed rice, water, and a pinch of salt. Add the butter for flavor.

        - Bring to a boil over medium-high heat. Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes or until all the water is absorbed. Remove from heat and let it sit covered for an additional 5 minutes. Fluff with a fork before serving.

          Make the Sauce:

            - In a small bowl, whisk together honey, soy sauce, rice vinegar, minced garlic, minced ginger, and red pepper flakes. Set aside.

              Cook the Shrimp:

                - In a large skillet, heat olive oil over medium-high heat. When hot, add the shrimp in a single layer. Season with salt and pepper. Cook for about 2-3 minutes on one side until pink.

                  - Flip the shrimp and pour the sauce over them. Cook for another 2-3 minutes, stirring occasionally, until the shrimp are fully cooked and the sauce has thickened slightly.

                    Serve:

                      - Serve the spicy honey garlic shrimp over a bed of fluffy jasmine rice. Drizzle any extra sauce from the skillet over the top.

                        - Garnish with chopped green onions and sprinkle with sesame seeds for an extra crunch.
