2 cups fresh peaches, peeled and diced

1 cup granulated sugar

2 teaspoons lemon juice

1 teaspoon cayenne pepper (adjust to taste)

1 teaspoon ground ginger

1 teaspoon cinnamon

2 cups all-purpose flour

1 cup rolled oats

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup unsalted butter, melted

1 large egg

1 teaspoon vanilla extract

Instructions
 

Preheat Oven: Start by preheating your oven to 350°F (175°C). Grease a 9x13 inch baking dish or line it with parchment paper for easier removal.

    Prepare Peaches: In a medium bowl, combine the diced peaches with 1/4 cup of sugar, lemon juice, cayenne pepper, ground ginger, and cinnamon. Gently stir to coat the peaches and set aside to marinate for about 15 minutes.

      Mix Dry Ingredients: In a separate large bowl, whisk together the flour, oats, baking powder, baking soda, and salt until well combined.

        Combine Wet Ingredients: In another bowl, mix the melted butter, remaining 3/4 cup sugar, egg, and vanilla extract until they are fully blended.

          Combine Mixtures: Gradually pour the wet ingredients into the dry ingredients, stirring until just combined and a sticky dough forms.

            Assemble Bars: Press half of the dough mixture into the bottom of the prepared baking dish to create an even layer. Make sure to press it down firmly.

              Add Peach Filling: Spoon the marinated peach mixture over the dough layer, spreading it evenly across the surface.

                Top with Remaining Dough: Crumble the remaining dough over the peaches, making sure to cover as much of the filling as possible.

                  Bake: Place the dish in the preheated oven and bake for 30-35 minutes or until the top is golden brown and a toothpick inserted into the center comes out clean.

                    Cool & Slice: Allow the bars to cool in the pan for about 15 minutes, then transfer them to a wire rack to cool completely. Once cool, slice into squares or rectangles.

                      Serve: Serve chilled or at room temperature, and enjoy the delightful combination of spicy peach flavors!
