14 oz (400g) firm tofu, drained and pressed

2 tablespoons vegetable oil

1 tablespoon Sichuan peppercorns

4 cloves garlic, minced

1-inch piece of ginger, minced

1 medium red bell pepper, sliced

1 medium green bell pepper, sliced

1 medium onion, sliced

2-3 green onions, chopped (for garnish)

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 tablespoon chili paste (adjust to your spice preference)

1 tablespoon sesame oil

1 teaspoon sugar

Salt to taste

Cooked rice or noodles (for serving)

Instructions
 

Prepare the Tofu: Cut the pressed tofu into bite-sized cubes. Pat dry with a paper towel to remove excess moisture.

    Heat the Oil: In a large skillet or wok, heat the vegetable oil over medium-high heat. Once hot, add the Sichuan peppercorns. Stir-fry for about 30 seconds until fragrant, then remove and discard the peppercorns. This step infuses the oil with their unique flavor.

      Stir-Fry the Tofu: Add the tofu cubes to the hot oil. Cook for about 5–7 minutes, turning occasionally until all sides are golden brown. Remove the tofu from the pan and set aside.

        Sauté Aromatics: In the same pan, add a bit more oil if needed. Add the minced garlic and ginger, sauté for about 30 seconds until fragrant.

          Add Vegetables: Toss in the sliced red and green bell peppers and onion. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp.

            Combine Ingredients: Return the golden tofu to the pan. In a small bowl, mix together the soy sauce, rice vinegar, chili paste, sesame oil, and sugar. Pour this sauce over the stir-fried tofu and vegetables, and toss everything together to coat evenly.

              Simmer: Allow it to simmer for another 2-3 minutes, stirring occasionally, until everything is heated through and the sauce thickens slightly. Season with salt to taste.

                Serve: Remove from heat, garnish with chopped green onions, and serve hot with cooked rice or noodles.
