2 medium russet potatoes, diced

1 tablespoon olive oil

1 small onion, diced

2 cloves garlic, minced

1 red bell pepper, diced

1 jalapeño pepper, seeded and diced

1 pound ground beef or turkey

2 tablespoons taco seasoning

Salt and pepper to taste

4 large eggs

1 avocado, sliced

1 cup shredded cheddar cheese

Fresh cilantro, chopped (for garnish)

Salsa (for serving)

Instructions
 

Cook the Potatoes: In a large skillet, heat olive oil over medium heat. Add the diced potatoes and season with salt and pepper. Cook for about 10-12 minutes, stirring occasionally, until they are golden brown and tender. Remove the potatoes from the skillet and set aside.

    Sauté the Vegetables: In the same skillet, add the diced onion, garlic, red bell pepper, and jalapeño. Sauté for about 5 minutes until the vegetables are softened.

      Cook the Meat: Add the ground beef or turkey to the skillet with the sautéed vegetables. Sprinkle the taco seasoning over the meat, and cook until the meat is browned and fully cooked, about 7-10 minutes.

        Combine the Ingredients: Return the cooked potatoes to the skillet and mix them with the meat and vegetables. Use a spatula to combine everything evenly. Let it cook for another 2-3 minutes to heat through.
