Spinach Chicken Casserole with Cream Cheese and Mozzarella

2 cups fresh spinach, chopped

2 cups cooked chicken, shredded (grilled or roasted)

8 oz cream cheese, softened

1 cup mozzarella cheese, shredded

1/2 cup sour cream

1/2 cup grated Parmesan cheese

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional for heat)

1 tablespoon olive oil

1/2 cup breadcrumbs (optional for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Sauté Spinach: In a large skillet, heat the olive oil over medium heat. Add the chopped spinach and sauté for about 2-3 minutes until wilted. Remove from heat and set aside to cool.

      Mix the Base: In a large mixing bowl, combine the softened cream cheese, sour cream, garlic powder, onion powder, salt, black pepper, and red pepper flakes (if using). Mix until smooth and well combined.

        Incorporate Chicken and Spinach: Fold in the shredded chicken and sautéed spinach into the cream cheese mixture, ensuring everything is evenly coated.

          Combine Cheeses: Gently stir in 3/4 cup of the shredded mozzarella and all of the Parmesan cheese, saving the remaining mozzarella for later.

            Transfer to Baking Dish: Grease a 9x13 inch baking dish and pour the mixture into it, spreading it out evenly.

              Add Topping: If desired, sprinkle the top with breadcrumbs for added texture and crunch. Finally, layer the remaining mozzarella cheese over the top.

                Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until bubbly and the cheese is melted and golden.
