6 large eggs

1 cup fresh spinach, chopped

1/2 cup feta cheese, crumbled

1/4 cup diced red bell pepper

1/4 cup chopped onion

1/4 teaspoon garlic powder

1/4 teaspoon black pepper

1/4 teaspoon salt

1/4 teaspoon paprika (optional)

Non-stick cooking spray or olive oil for greasing

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Muffin Tin: Lightly grease a standard muffin tin with non-stick cooking spray or brush with olive oil to prevent sticking.

      Whisk the Eggs: In a large mixing bowl, crack the eggs and whisk them until fully beaten. Make sure the yolks and whites are well combined.

        Mix in the Veggies and Feta: To the beaten eggs, add the chopped spinach, crumbled feta cheese, diced red bell pepper, chopped onion, garlic powder, black pepper, salt, and paprika. Mix everything together until the ingredients are evenly distributed.

          Fill the Muffin Tin: Pour the egg mixture into the prepared muffin tin, filling each cup about 3/4 full. Leave a little space at the top as they will puff up when baking.

            Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until the egg muffins are set in the center and lightly golden on top.

              Cool and Serve: Once baked, remove the muffin tin from the oven and let it cool for a few minutes. Gently run a knife around the edges to loosen the muffins and carefully remove them. Serve warm or at room temperature.

                Storage: Any leftovers can be stored in an airtight container in the refrigerator for up to 4 days. Reheat in the microwave for a quick breakfast or snack!
