Spinach Mushroom Quiche Cups

1 cup fresh spinach, chopped

1 cup mushrooms, sliced

4 large eggs

1 cup heavy cream

1 cup shredded cheddar cheese

½ cup diced onions

2 tablespoons olive oil

1 teaspoon garlic powder

½ teaspoon salt

¼ teaspoon black pepper

1 package (1 sheet) of pre-made puff pastry

Cooking spray or butter for greasing

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C). Grease a muffin tin with cooking spray or butter.

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced onions and sauté for about 3-4 minutes until they are translucent. Add the sliced mushrooms and continue to cook for another 5 minutes until the mushrooms are browned. Finally, add the chopped spinach and sauté for another 2-3 minutes until wilted. Remove from heat and let it cool slightly.

      Prepare the Egg Mixture: In a mixing bowl, whisk together the eggs, heavy cream, garlic powder, salt, and black pepper until well combined. Stir in the sautéed vegetable mixture and half of the shredded cheddar cheese (reserve the other half for topping).

        Prepare the Puff Pastry: Roll out the puff pastry sheet on a lightly floured surface. Using a round cutter or the rim of a glass, cut out circles that are about 4-5 inches in diameter. You should have enough to line your muffin tin with small cups.

          Assemble the Cups: Gently press each pastry circle into the greased muffin tin wells, making sure that the edges come up to form small cups.

            Fill the Quiche Cups: Spoon the egg and vegetable mixture into each puff pastry cup, filling them about ¾ full. Sprinkle the remaining cheddar cheese on top of each filled cup.

              Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the egg is set and the tops are golden brown.

                Cool and Serve: Once baked, remove the quiche cups from the oven and let them cool for a few minutes before carefully removing them from the muffin tin. Serve warm or at room temperature. Enjoy your delicious Spinach Mushroom Quiche Cups!
