Spinach Mushroom Stuffed Pasta Shells

Ingredients
  

20 jumbo pasta shells

2 cups fresh spinach, chopped

1 cup mushrooms, diced (white or cremini)

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 clove garlic, minced

1/4 teaspoon nutmeg

Salt and pepper, to taste

2 cups marinara sauce

Fresh basil leaves, for garnish (optional)

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Cook Pasta Shells: In a large pot of salted boiling water, cook the jumbo shells according to package instructions until al dente. Drain and rinse under cold water to stop cooking. Set aside.

      Sauté Vegetables: In a large skillet over medium heat, add a drizzle of olive oil. Add the diced mushrooms and sauté for about 5-7 minutes until browned and most of their moisture is evaporated. Add the minced garlic and cook for another 1-2 minutes until fragrant. Incorporate the chopped spinach and cook until wilted. Season with salt, pepper, and nutmeg. Remove from heat and let cool slightly.

        Prepare Cheese Filling: In a mixing bowl, combine the ricotta cheese, half of the mozzarella, half of the Parmesan, and the sautéed spinach and mushroom mixture. Stir well to combine.

          Stuff Shells: Spoon generous amounts of the filling into each cooked pasta shell. Place the stuffed shells in a large baking dish.

            Add Sauce: Pour the marinara sauce evenly over the stuffed shells. Sprinkle the remaining mozzarella and Parmesan cheese on top.

              Bake: Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes. After 20 minutes, remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.

                Serve: Remove from the oven and let it rest for 5 minutes before serving. Garnish with fresh basil leaves if desired.
