2 lbs chicken wings

1/3 cup soy sauce

1/4 cup honey

2 tablespoons rice vinegar

2 tablespoons sesame oil

4 cloves garlic, minced

1 inch ginger, grated

1 teaspoon black pepper

1 teaspoon red pepper flakes (optional for spice)

1 tablespoon cornstarch (optional for thickness)

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Instructions
 

Marinade Preparation: In a large mixing bowl, whisk together the soy sauce, honey, rice vinegar, sesame oil, minced garlic, grated ginger, black pepper, and red pepper flakes (if using) until well combined.

    Marinate the Wings: Add the chicken wings to the bowl and toss them thoroughly in the marinade. Ensure that each wing is well coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or preferably overnight for maximum flavor.

      Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with aluminum foil and place a wire rack on top. This will allow the chicken to crisp up nicely.

        Arrange the Wings: Remove the wings from the marinade (reserve the marinade) and arrange them in a single layer on the wire rack. This will ensure even cooking and crispiness.

          Bake: Bake the wings in the preheated oven for about 25-30 minutes, flipping them halfway through, until they are golden brown and crispy.

            Prepare the Glaze: While the wings bake, take the reserved marinade and pour it into a small saucepan. If you prefer a thicker glaze, mix the cornstarch with a few tablespoons of water to make a slurry and add it to the saucepan. Bring the marinade to a gentle boil and simmer for 5 minutes until it slightly thickens.

              Glaze the Wings: Once the wings are done baking, remove them from the oven and brush the thickened marinade over them for an extra layer of flavor. Return the wings to the oven for another 5-10 minutes, allowing the glaze to caramelize slightly.

                Serve: Once done, remove the wings from the oven and let them rest for a few minutes. Garnish with chopped green onions and sesame seeds before serving.
