Ingredients

2 cups cream cheese, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 cup Greek yogurt (plain)

1 1/2 cups fresh strawberries, hulled and diced

1/2 cup graham cracker crumbs

Pinch of salt

Optional: dark chocolate chips or white chocolate drizzle for topping

Instructions

Prepare the Base: In a mixing bowl, combine the softened cream cheese, powdered sugar, vanilla extract, and salt. Beat with a hand mixer or stand mixer until smooth and creamy.

Add Yogurt: Gently fold in the Greek yogurt until well blended and light. Set aside.

Prepare Strawberries: In another bowl, mix the diced strawberries with a tablespoon of powdered sugar. This will help release some of their natural juices and intensify their flavor.

Spread the Mixture: Line a baking sheet or a tray with parchment paper. Pour the cream cheese and yogurt mixture onto the lined tray, spreading it into an even layer about 1/2 inch thick.

Add Strawberries and Crumbs: Sprinkle the sweetened strawberries evenly over the cream cheese layer. Then sprinkle the graham cracker crumbs on top, ensuring even coverage.

Optional Toppings: If desired, sprinkle dark or white chocolate chips on top for an added treat.

Freeze: Place the tray in the freezer for at least 4-6 hours or until completely frozen.

Cut and Serve: Once frozen, remove the bark from the tray using the parchment paper. Break into pieces or cut into squares. Serve immediately or store in an airtight container in the freezer for up to two weeks.
