Ingredients

1 cup rolled oats

1 cup almond milk (or any milk of your choice)

1/2 cup Greek yogurt (or dairy-free yogurt)

1/4 cup cream cheese, softened (or vegan cream cheese)

2 tablespoons maple syrup (or honey)

1 teaspoon vanilla extract

1/2 teaspoon cinnamon

1 cup fresh strawberries, hulled and sliced

2 tablespoons crushed graham crackers (optional for topping)

Fresh mint leaves for garnish (optional)

Instructions

In a medium bowl, combine the rolled oats, almond milk, Greek yogurt, cream cheese, maple syrup, vanilla extract, and cinnamon. Stir until well mixed and creamy.

Fold in the sliced strawberries, reserving a few for topping the oats later.

Divide the mixture evenly into two mason jars or bowls. Seal them tightly with lids or plastic wrap, and refrigerate overnight (or for at least 4 hours) to allow the oats to absorb the liquid and flavors.

In the morning, give the oats a good stir. If they are too thick, you can add a splash of milk to reach your desired consistency.

Top each jar or bowl with the reserved strawberry slices, a sprinkle of crushed graham crackers, and a mint leaf for an added touch of freshness.

Serve chilled and enjoy your delicious, no-cook, Strawberry Cheesecake Overnight Oats!
