Ingredients

8 slices of thick-cut brioche or challah bread

1 cup fresh strawberries, hulled and sliced

8 oz cream cheese, softened

1/4 cup powdered sugar

1 tsp vanilla extract

4 large eggs

1/2 cup milk (whole or your preference)

1 tsp ground cinnamon

1/4 tsp nutmeg (optional)

2 tbsp butter (for cooking)

Maple syrup (for serving)

Whipped cream (for serving, optional)

Additional sliced strawberries (for garnish, optional)

Instructions

Prepare the Stuffing: In a medium bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy. Gently fold in the sliced strawberries. Set aside.

Assemble the French Toast: Take two slices of the brioche or challah bread. Spread a generous amount of the cream cheese mixture onto one slice, then top with another slice to create a sandwich. Repeat this process for the remaining slices.

Mix the Batter: In a shallow dish, whisk together the eggs, milk, ground cinnamon, and nutmeg (if using) until well combined.

Coat the Sandwiches: Dip each stuffed sandwich quickly into the egg mixture, ensuring both sides are well-coated but not overly saturated.

Cook the French Toast: Heat a large skillet or griddle over medium heat and add 1 tablespoon of butter. Once the butter is melted and bubbling, place 2-3 of the stuffed sandwiches in the skillet, depending on the size of your skillet. Cook for about 3-4 minutes on each side, or until golden brown and crispy. Add more butter as needed for subsequent batches.

Serve: Once cooked, transfer the French toast to a serving plate. Drizzle with maple syrup, top with whipped cream if desired, and garnish with additional sliced strawberries.

Enjoy: Serve while warm and enjoy a deliciously decadent breakfast or brunch!
