Ingredients

1 cup (2 sticks) unsalted butter, melted

1 ½ cups brown sugar, packed

2 large eggs

1 teaspoon vanilla extract

2 cups all-purpose flour

½ teaspoon baking powder

½ teaspoon baking soda

½ teaspoon salt

Zest of 1 large lemon

½ cup fresh strawberries, hulled and chopped

Juice of 1 large lemon (about 3 tablespoons)

Optional: powdered sugar for dusting

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a 9x9 inch baking pan with parchment paper, leaving some overhang for easy removal.

Mix Wet Ingredients: In a large mixing bowl, combine the melted butter and brown sugar. Stir until the mixture is smooth and well combined. Next, add the eggs one at a time, mixing well after each addition. Finally, stir in the vanilla extract.

Combine Dry Ingredients: In another bowl, whisk together the flour, baking powder, baking soda, and salt.

Incorporate Dry and Wet Mixtures: Gradually fold the dry mixture into the wet mixture using a spatula. Be careful not to overmix.

Add Lemon and Strawberries: Gently fold in the lemon zest, lemon juice, and chopped strawberries until evenly distributed throughout the batter.

Bake: Pour the batter into the prepared baking pan and spread it evenly. Bake in the preheated oven for about 25-30 minutes or until a toothpick inserted into the center comes out clean or with a few moist crumbs.

Cool and Slice: Allow the blondies to cool in the pan for about 10 minutes before transferring them to a wire rack to cool completely. Once cool, slice them into squares.

Dust and Serve: If desired, dust with powdered sugar before serving for an extra touch of sweetness.
