1 tablespoon poppy seeds

½ teaspoon baking powder

½ teaspoon baking soda

¼ teaspoon salt

½ cup unsalted butter, softened

¾ cup granulated sugar

2 large eggs

Zest of 1 lemon

1 teaspoon vanilla extract

½ cup buttermilk

1 ½ cups fresh strawberries, hulled and diced

2 tablespoons lemon juice

Coarse sugar for sprinkling (optional)

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease with non-stick spray.

    Dry Ingredients: In a medium bowl, whisk together the flour, poppy seeds, baking powder, baking soda, and salt. Set aside.

      Cream Butter and Sugar: In a large mixing bowl, cream the softened butter and granulated sugar together using an electric mixer on medium speed until the mixture is light and fluffy, about 3-5 minutes.
