Ingredients

4 cups fresh arugula, washed and dried

1 cup strawberries, hulled and sliced

1 cup peaches, pitted and sliced

½ cup crumbled feta cheese

⅓ cup walnuts, toasted

¼ cup red onion, thinly sliced

3 tablespoons olive oil

1 tablespoon balsamic vinegar

1 teaspoon honey

Salt and pepper to taste

Instructions

Prepare the Ingredients: Start by washing and drying the arugula thoroughly to prevent any sogginess. Hull and slice the strawberries, and pit and slice the peaches into thin wedges. Toast the walnuts in a dry skillet over medium heat for about 5 minutes or until fragrant, stirring frequently.

Make the Dressing: In a small bowl, whisk together the olive oil, balsamic vinegar, honey, salt, and pepper until the mixture is well combined and emulsified.

Combine the Salad: In a large salad bowl, add the arugula, sliced strawberries, and peach wedges. Gently toss them together to combine without bruising the fruit.

Add Toppings: Sprinkle the crumbled feta cheese, toasted walnuts, and red onion over the top of the salad mixture.

Dress and Toss: Drizzle the dressing over the salad just before serving, and toss gently to coat all ingredients evenly.

Serve: Serve the Strawberry Peach Arugula Salad immediately for the freshest flavor, or refrigerate for up to 30 minutes before serving to allow flavors to meld.
