Ingredients
  

1 1/4 cups all-purpose flour, plus extra for dusting

1/4 cup granulated sugar, divided

1/4 teaspoon salt

1/2 cup unsalted butter, cold and cubed

3 to 4 tablespoons ice water

2 cups fresh strawberries, hulled and quartered

2 cups fresh peaches, pitted and thinly sliced

1 tablespoon cornstarch

1 teaspoon vanilla extract

1 teaspoon lemon juice

1 egg, beaten (for egg wash)

Coarse sugar, for sprinkling (optional)

Instructions
 

Make the Dough:

    - In a large mixing bowl, combine the flour, 2 tablespoons of sugar, and salt.

      - Add the cold, cubed butter to the flour mixture. Use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs.

        - Gradually add ice water, one tablespoon at a time, until the dough comes together. You might not need all the water; avoid overworking the dough.

          - Shape the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

            Prepare the Filling:

              - In a large bowl, combine the strawberries, peaches, cornstarch, remaining 2 tablespoons of sugar, vanilla extract, and lemon juice. Toss gently and let sit for about 10-15 minutes to allow the juices to combine.

                Preheat the Oven:

                  - Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

                    Roll Out the Dough:

                      - On a floured surface, roll out the chilled dough into a roughly 12-inch circle (about 1/4 inch thick). Don’t worry about it being a perfect circle; rustic is the way to go!

                        Assemble the Galette:

                          - Transfer the rolled-out dough to the prepared baking sheet.

                            - Spoon the fruit filling into the center of the dough, leaving about a 2-inch border.

                              - Gently fold the edges of the dough over the filling, pleating it as you go around. It's okay if some of the fruit is exposed.

                                Brush with Egg Wash:

                                  - Brush the exposed dough edges with beaten egg to give it a golden-brown color when baked. If desired, sprinkle coarse sugar on the dough for extra crunch and sweetness.

                                    Bake:

                                      - Bake the galette in the preheated oven for 35-40 minutes or until the crust is golden and the filling is bubbly.

                                        Cool and Serve:

                                          - Once baked, allow the galette to cool for at least 15 minutes before slicing. Serve warm or at room temperature, with a scoop of vanilla ice cream or a dollop of whipped cream on top if desired.
