2 cups fresh strawberries, hulled and sliced

1 cup heavy whipping cream

1 cup mini marshmallows

8 oz cream cheese, softened

1 cup powdered sugar

1 tsp vanilla extract

1 cup crushed shortbread cookies (or crushed graham crackers)

1/2 cup shredded coconut (optional)

Fresh mint leaves for garnish (optional)

Instructions
 

Prepare the Strawberries: In a medium bowl, combine the sliced strawberries with a tablespoon of powdered sugar. Toss gently to coat and allow them to sit for about 10-15 minutes to release some of their juices.

    Make the Cream Mixture: In a large bowl, using an electric mixer, beat the softened cream cheese until smooth. Gradually add the powdered sugar and vanilla extract, mixing until well combined and fluffy.

      Whip the Cream: In a separate bowl, whip the heavy whipping cream until soft peaks form. This usually takes about 3-5 minutes at high speed.

        Combine Ingredients: Gently fold the whipped cream into the cream cheese mixture using a spatula. Be careful not to deflate the whipped cream too much; you want to keep it light and fluffy.

          Add Mix-ins: Once combined, fold in the mini marshmallows, the prepared strawberries (with juices), and the crushed shortbread cookies. If you’re using shredded coconut, add it in at this stage as well.

            Chill: Cover the fluff salad with plastic wrap and refrigerate for at least 30 minutes to let the flavors meld together.
