Ingredients

2 cups fresh strawberries, hulled and sliced

2 tablespoons granulated sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

1/2 cup powdered sugar

1 teaspoon vanilla extract (for whipped cream)

1 package (14-oz) honey graham crackers

1/2 cup cream cheese, softened

1/2 cup sour cream

Fresh mint leaves for garnish (optional)

Instructions

Prepare the Strawberries: In a medium bowl, combine the sliced strawberries, granulated sugar, and 1 teaspoon of vanilla extract. Toss gently to coat, then let the mixture sit for about 10-15 minutes to release the juices.

Make the Whipped Cream: In a separate large bowl, combine the heavy whipping cream, powdered sugar, and 1 teaspoon of vanilla extract. Using an electric mixer, beat on medium-high speed until soft peaks form. Be careful not to over-whip; you want a smooth, fluffy texture.

Mix the Cheese Filling: In another bowl, combine the softened cream cheese and sour cream. Mix until smooth and well combined. You can use a whisk or a hand mixer for this step.

Layer the Ingredients: In a 9x13 inch baking dish, start layering the ingredients. First, place a layer of graham crackers on the bottom of the dish. Spread a portion of the cream cheese mixture over the crackers, followed by a layer of whipped cream. Then, add half of the strawberry mixture on top.

Repeat Layers: Repeat the layering process with graham crackers, cream cheese filling, and whipped cream. Use the remaining strawberry mixture as the final layer on top. You can add a few more whipped cream dollops for garnish if desired.

Chill the Cake: Cover the dish with plastic wrap, and refrigerate for at least 4 hours, or overnight for the best flavor and texture. This step allows the graham crackers to absorb moisture and soften.

Serve: Once chilled and set, slice the cake into squares and serve garnished with fresh mint leaves if you like. Enjoy this delightful dessert that's perfect for any occasion!
