Stuffed Charcuterie Board Bell Peppers

4 medium bell peppers (any color)

1 cup cooked quinoa

1 cup diced salami

1/2 cup sliced pepperoni

1/2 cup shredded mozzarella cheese

1/2 cup crumbled feta cheese

1/2 cup cherry tomatoes, halved

1/4 cup black olives, sliced

1/4 cup fresh basil, chopped

1/4 cup balsamic glaze

Salt and pepper to taste

Olive oil for drizzling

Preheat the Oven: Start by preheating your oven to 375°F (190°C).

    Prepare the Bell Peppers: Cut the tops off the bell peppers and remove the seeds and membranes. Lightly drizzle the outside and inside of the peppers with olive oil and sprinkle with salt and pepper.

      Mix the Filling: In a large bowl, combine the cooked quinoa, diced salami, sliced pepperoni, shredded mozzarella cheese, crumbled feta cheese, halved cherry tomatoes, sliced black olives, and chopped fresh basil. Stir until all ingredients are well mixed. Adjust seasoning with salt and pepper to taste.

        Stuff the Peppers: Spoon the filling mixture into each bell pepper, packing it down gently to fill them generously.

          Bake the Peppers: Place the stuffed bell peppers upright in a baking dish. Drizzle with a little more olive oil and cover the dish with aluminum foil. Bake in the preheated oven for 25-30 minutes, then remove the foil and bake for an additional 10-15 minutes until the peppers are tender and the tops are golden and slightly crispy.

            Drizzle and Serve: Once out of the oven, drizzle with balsamic glaze and let them cool for a few minutes before serving. Garnish with extra basil if desired.
