Ingredients
  

2 cups fresh sugar snap peas, trimmed

1 cup cherry tomatoes, halved

1 small red onion, thinly sliced

1/2 cup feta cheese, crumbled

1/4 cup toasted walnuts, roughly chopped

2 tablespoons fresh mint leaves, chopped

2 tablespoons olive oil

1 tablespoon apple cider vinegar

1 teaspoon honey

Salt and pepper, to taste

Prepare the Peas: Bring a medium pot of salted water to a boil. Add the sugar snap peas and blanch them for about 1-2 minutes until bright green and slightly tender. Drain and immediately transfer to a bowl of ice water to stop the cooking process. Once cooled, drain again and pat dry.

    Combine Vegetables: In a large salad bowl, combine the blanched sugar snap peas, halved cherry tomatoes, and thinly sliced red onion. Give it a gentle toss to mix the vegetables evenly.
