Summer Herb Chicken Pasta

2 boneless, skinless chicken breasts

8 oz. pasta (your choice, such as penne or fettuccine)

2 tbsp olive oil

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 medium zucchini, sliced

1 bell pepper (any color), diced

1/2 cup fresh basil, chopped

1/4 cup fresh parsley, chopped

1/4 cup grated Parmesan cheese

Salt and pepper, to taste

Zest and juice of 1 lemon

Instructions
 

Prepare the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

    Cook the Chicken: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper. Add the chicken to the skillet and cook for 6-7 minutes on each side until cooked through and golden brown. Remove from skillet and let rest for 5 minutes before slicing into strips.

      Sauté the Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Add the minced garlic, cherry tomatoes, zucchini, and bell pepper. Sauté for 4-5 minutes until the vegetables are tender and the tomatoes start to burst.

        Combine All Ingredients: Add the cooked pasta, sliced chicken, fresh basil, parsley, lemon zest, and lemon juice to the skillet. Gently toss to combine, adding reserved pasta water as needed to create a light sauce that coats the pasta.

          Add the Cheese: Sprinkle the grated Parmesan cheese over the pasta and toss again until well combined. Adjust seasoning with salt and pepper to taste.
