Summer Veggie Pizza Rolls

Ingredients
  

1 tube refrigerated pizza dough

1 cup shredded mozzarella cheese

1/2 cup ricotta cheese

1 small zucchini, finely diced

1 small yellow squash, finely diced

1/2 red bell pepper, finely diced

1/4 cup finely chopped red onion

1/2 cup sliced black olives

2 cloves garlic, minced

1 teaspoon dried oregano

1/2 teaspoon crushed red pepper flakes (optional)

Salt and pepper, to taste

1 egg (for egg wash)

Olive oil, for drizzling

Fresh basil leaves, for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone mat.

    Prepare the Dough: Unroll the pizza dough onto a lightly floured surface. Using a rolling pin, stretch the dough into a rectangle about 1/4 inch thick.

      Make the Veggie Filling: In a mixing bowl, combine the diced zucchini, yellow squash, red bell pepper, red onion, black olives, minced garlic, oregano, crushed red pepper flakes, salt, and pepper. Mix until well incorporated.

        Spread the Cheese Mixture: In another bowl, mix together the ricotta and mozzarella cheeses until smooth. Spread this cheese mixture evenly over the dough, leaving about 1 inch of dough around the edges.

          Add the Veggie Filling: Spoon the prepared veggie mixture evenly over the cheese layer, ensuring an even distribution.

            Roll It Up: Starting from one long edge, carefully roll the dough away from you, creating a tight cylinder. Pinch the edges to seal the roll.

              Slice into Rolls: Using a sharp knife or a pizza cutter, slice the roll into 1-inch pieces. You should have about 12-14 rolls.

                Prepare for Baking: Place the rolls cut-side up on the prepared baking sheet. Beat the egg in a small bowl and brush it over the tops of the rolls. Drizzle with olive oil for extra crispiness.

                  Bake: Bake in the preheated oven for 20-25 minutes or until golden brown and puffed.

                    Serve and Garnish: Remove the rolls from the oven and let them cool for a few minutes. Garnish with fresh basil leaves before serving. Enjoy warm with marinara sauce for dipping!
