1 medium zucchini, sliced into rounds

1 bell pepper (red, yellow, or orange), cut into 1-inch pieces

1 red onion, cut into wedges

1 cup cherry tomatoes

1 cup button mushrooms, halved

1 cup corn kernels (fresh or frozen, thawed)

2 tablespoons olive oil

2 tablespoons balsamic vinegar

1 teaspoon garlic powder

1 teaspoon dried oregano

Salt and pepper, to taste

Fresh basil leaves, for garnish (optional)

Instructions
 

Preparation of Skewers: If using wooden skewers, soak them in water for at least 30 minutes to prevent burning on the grill.

    Vegetable Prep: In a large bowl, combine the sliced zucchini, bell pepper pieces, red onion wedges, cherry tomatoes, halved mushrooms, and corn kernels.

      Marinating Vegetables: In a separate small bowl, whisk together the olive oil, balsamic vinegar, garlic powder, dried oregano, salt, and pepper. Pour this mixture over the vegetables and toss well to coat evenly. Allow the veggies to marinate for about 15-20 minutes for enhanced flavor.
