Ingredients
  

1 cup raw almonds

1 cup Medjool dates, pitted (about 10-12 dates)

1/2 cup rolled oats (gluten-free if needed)

2 tablespoons almond butter

1 tablespoon honey or maple syrup

1 teaspoon vanilla extract

1/2 teaspoon cinnamon

A pinch of sea salt

1/4 cup shredded coconut (optional, for rolling)

1/4 cup dark chocolate chips (optional, for added sweetness)

Instructions
 

Prepare the Almonds: In a food processor, pulse the raw almonds until they reach a fine meal consistency. Be careful not to over-process; you don’t want almond butter!

    Combine Ingredients: Add the pitted Medjool dates, rolled oats, almond butter, honey or maple syrup, vanilla extract, cinnamon, and a pinch of sea salt to the food processor with the almond meal.

      Blend: Pulse the mixture together until it’s well combined and starts sticking together. It should be a sticky and cohesive dough.

        Taste Test: Give the mixture a taste. If you prefer a sweeter energy ball, feel free to add a few chocolate chips at this point and pulse again until mixed!

          Form the Balls: Using your hands, take about a tablespoon of the mixture and roll it into a ball shape. Repeat the process until all the dough is used.

            Coat (Optional): If you’d like, roll the energy balls in shredded coconut to add a fun texture.

              Chill: Place the energy balls on a plate or a baking sheet and refrigerate for at least 30 minutes to help them firm up.

                Enjoy: Serve chilled or at room temperature. Store any leftovers in an airtight container in the fridge for up to a week or freeze for longer storage.
