Sweet and Spicy Pineapple Chicken

1 lb (450g) boneless, skinless chicken thighs

1 cup fresh pineapple, diced (or canned, drained)

3 tablespoons soy sauce

2 tablespoons honey

1 tablespoon sriracha (adjust for spice preference)

1 tablespoon rice vinegar

1 teaspoon garlic powder

1 teaspoon ginger powder (or 1 inch fresh ginger, minced)

1 tablespoon cornstarch

1 tablespoon vegetable oil

1/4 cup scallions, chopped (for garnish)

Sesame seeds (for garnish)

Salt and pepper, to taste

Instructions
 

Marinate the Chicken: In a medium bowl, combine soy sauce, honey, sriracha, rice vinegar, garlic powder, ginger powder, salt, and pepper. Mix well. Add in the chicken thighs, making sure they are well coated. Cover and let marinate in the fridge for at least 30 minutes (or up to 2 hours for more flavor).

    Prepare for Cooking: After marinating, remove the chicken from the fridge. If using fresh pineapple, dice it into bite-sized chunks and set aside.

      Cook the Chicken: In a large skillet or wok, heat vegetable oil over medium-high heat. Remove the chicken from the marinade (reserve the marinade) and add it to the skillet. Cook for about 5-7 minutes on each side, or until the chicken is browned and cooked through (internal temperature should reach 165°F/75°C).

        Thicken the Sauce: In a small bowl, mix the reserved marinade with cornstarch to create a slurry. Once the chicken is cooked, add the diced pineapple to the skillet with the chicken. Pour the cornstarch slurry over the chicken and pineapple, stirring to combine. Let it simmer for another 3-5 minutes until the sauce thickens and becomes glossy.
