Ingredients

1 cup rolled oats

1 cup vanilla protein powder

1 cup unsweetened applesauce

1/2 cup almond butter (or any nut butter of choice)

1/4 cup honey or maple syrup

1 teaspoon ground cinnamon

1/2 teaspoon nutmeg

1/4 teaspoon salt

1/2 cup chopped dried apples

Optional: 1/4 cup chopped walnuts or pecans for added crunch

Instructions

Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, vanilla protein powder, ground cinnamon, nutmeg, and salt. Stir until well mixed.

Combine Wet Ingredients: In a separate bowl, mix together the unsweetened applesauce, almond butter, and honey (or maple syrup) until smooth and creamy.

Combine All Ingredients: Pour the wet mixture into the dry ingredients and stir until everything is fully combined. The mixture should be thick but moldable. If it's too dry, add a splash of almond milk; if it's too wet, add a bit more oats.

Add Dried Apples: Gently fold in the chopped dried apples and nuts (if using) until evenly distributed throughout the mixture.

Chill the Mixture: Cover the bowl with plastic wrap or a lid and refrigerate the mixture for about 30 minutes to help it firm up.

Form the Bites: After chilling, using your hands, scoop out small portions of the mixture (about 1 inch in diameter) and roll them into balls. Place the formed bites on a parchment-lined baking sheet.

Refrigerate Again: Once all the bites are shaped, place them back in the refrigerator for an additional 30 minutes to set.

Enjoy!: Serve the protein bites as a healthy snack or a quick breakfast option. Store any leftovers in an airtight container in the refrigerator for up to a week.

Prep Time: 15 minutes | Total Time: 1 hour 15 minutes | Servings: About 15 bites
