Ingredients

1 cup rolled oats

1/2 cup vanilla protein powder

1/2 cup unsweetened almond butter

1/4 cup honey or maple syrup

1/2 cup finely chopped dried apples

1 teaspoon cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon salt

1/4 cup chopped walnuts (optional)

1-2 tablespoons water (as needed)

Instructions

Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, vanilla protein powder, cinnamon, nutmeg, and salt. Stir until well mixed.

Add Wet Ingredients: Add in the almond butter and honey (or maple syrup) to the dry mixture. Mix well using a spatula or your hands to combine the ingredients until evenly distributed.

Incorporate Apples and Nuts: Fold in the finely chopped dried apples and chopped walnuts, ensuring they are evenly dispersed throughout the mixture.

Adjust Consistency: If the mixture appears too dry and crumbly, add water one tablespoon at a time until it reaches a sticky but moldable consistency.

Form Bites: Using your hands, scoop out small portions of the mixture (about a tablespoon each) and roll them into balls. Place them on a parchment-lined baking sheet or plate.

Chill: Once all protein bites are formed, refrigerate for at least 30 minutes to firm them up.

Serve and Store: Enjoy your Sweet Apple Pie Protein Bites right away or store them in an airtight container in the refrigerator for up to one week.
