1 lb boneless, skinless chicken thighs

1/2 cup sweet chili sauce

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon fresh lime juice

1 teaspoon minced garlic

1 teaspoon grated ginger

Salt and pepper to taste

4 whole wheat pita pockets

1 cup shredded lettuce

1 cup shredded carrots

1/2 cup cucumber, sliced

1/4 cup fresh cilantro, chopped

Optional: sliced jalapeño for extra heat

Instructions
 

Marinate the Chicken:

    In a medium bowl, combine the sweet chili sauce, soy sauce, sesame oil, lime juice, garlic, ginger, salt, and pepper. Add the chicken thighs to the bowl, ensuring they are well coated. Cover and marinate in the refrigerator for at least 30 minutes or up to 2 hours for maximum flavor.

      Cook the Chicken:

        Preheat a grill pan or outdoor grill over medium-high heat. Remove the chicken from the marinade and grill for about 6-7 minutes per side, or until fully cooked and slightly charred (internal temperature should reach 165°F or 75°C). Once done, remove from the grill and let it rest for 5 minutes before slicing into strips.

          Prepare the Pita:

            While the chicken is resting, warm the pita pockets on the grill for about 1 minute on each side until they are soft and pliable. Alternatively, you can warm them in a conventional oven at 350°F (175°C) for about 5 minutes.

              Assemble the Wraps:

                In each pita pocket, add a generous handful of shredded lettuce and shredded carrots. Next, place the sliced chicken on top. Add sliced cucumber, a sprinkle of fresh cilantro, and if desired, a few slices of jalapeño for an added kick.

                  Serve:
