Sweet Corn and Bacon Fritter Cakes

2 cups sweet corn kernels (fresh or frozen)

4 slices of bacon, chopped

1 cup all-purpose flour

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon smoked paprika

2 large eggs

1/2 cup milk

1/4 cup green onions, finely sliced

1/2 cup crumbled feta cheese (optional)

Vegetable oil for frying

Fresh cilantro or parsley for garnish

Instructions
 

Cook the Bacon: In a large skillet over medium heat, cook the chopped bacon until crispy. Once done, remove it with a slotted spoon and set it aside on a plate lined with paper towels. Leave about 1 tablespoon of bacon fat in the skillet for extra flavor.

    Prepare the Batter: In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, black pepper, and smoked paprika.

      Combine Wet Ingredients: In a separate bowl, whisk the eggs and milk. Once combined, pour this mixture into the dry ingredients and stir until just combined. Be careful not to over-mix.

        Add Corn and Bacon: Fold in the sweet corn, crispy bacon, green onions, and feta cheese (if using). The mixture should be thick but still pourable.

          Heat the Oil: In the same skillet used for the bacon, add enough vegetable oil to cover the bottom of the pan with a thin layer. Heat over medium heat until the oil shimmers.

            Fry the Fritters: Using a 1/4 cup measuring cup, scoop the fritter mixture into the hot oil. Flatten each fritter slightly with the back of the measuring cup. Cook for about 3-4 minutes on each side, or until golden brown and crispy. You may need to fry in batches to avoid overcrowding the pan.

              Drain and Garnish: Once cooked, remove the fritters and place them on paper towels to drain excess oil.

                Serve: Garnish with fresh cilantro or parsley, and serve warm with your favorite dipping sauce such as garlic aioli, sour cream, or a spicy salsa.
