Ingredients

2 cups fresh or frozen sweet corn, thawed if frozen

1 cup diced green chiles (canned or roasted)

2 cups all-purpose flour

1 tablespoon baking powder

1 teaspoon baking soda

1 teaspoon salt

½ teaspoon black pepper

1 teaspoon garlic powder

½ cup cold unsalted butter, cubed

1 cup buttermilk

1 large egg

1 cup shredded cheddar cheese (optional)

Fresh cilantro or green onion for garnish

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C). Grease a 9x13-inch baking dish or line it with parchment paper.

Mix the Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, black pepper, and garlic powder until well combined.

Add the Butter: Cut the cold butter into the dry ingredients using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

Combine Wet Ingredients: In a separate bowl, mix the buttermilk and egg until thoroughly combined. Gradually add this mixture to the dry ingredients, stirring until just combined.

Fold in the Corn and Chiles: Gently fold the sweet corn and diced green chiles into the biscuit dough, being careful not to overmix.

Add Cheese (Optional): If using, fold in the shredded cheddar cheese into the dough for a cheesy twist.

Transfer to Baking Dish: Spoon the biscuit dough into the prepared baking dish, spreading it out evenly.

Bake: Place the dish in the preheated oven and bake for 20-25 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.

Cool and Serve: Remove the casserole from the oven and allow it to cool for about 10 minutes. Garnish with fresh cilantro or chopped green onions before serving.

Enjoy: Slice into squares and serve warm as a delightful side dish or hearty breakfast option!
