Ingredients

1 cup sweet corn kernels (fresh or frozen)

1/2 cup all-purpose flour

1/4 cup cornmeal

1 tsp baking powder

1/2 tsp salt

1/4 tsp black pepper

1/4 tsp smoked paprika (optional)

1/4 cup milk (dairy or non-dairy)

1 large egg

2 tbsp chopped fresh cilantro or parsley (optional)

1 cup shredded cheese (cheddar, mozzarella, or your choice)

4 slices of bread (sourdough, whole grain, or your favorite)

2 tbsp butter or olive oil, for frying

Optional toppings: avocado slices, sliced tomatoes, or hot sauce

Instructions

Prepare the Fritter Mix: In a medium mixing bowl, combine the sweet corn, flour, cornmeal, baking powder, salt, black pepper, and smoked paprika. Mix well.

Add Wet Ingredients: In another bowl, whisk together the milk and egg. Pour this mixture into the dry ingredients and stir until just combined. If desired, fold in the chopped cilantro or parsley for added freshness.

Cook the Fritters: Heat a non-stick skillet or griddle over medium heat and add 1 tablespoon of butter or olive oil. Once hot, drop spoonfuls of the corn batter onto the skillet, flattening them gently to form fritters. Cook for 3-4 minutes on each side or until golden brown and crispy. Transfer to a plate lined with paper towels to drain excess oil.

Assemble the Sandwich Melts: Place a fried corn fritter on a slice of bread, sprinkle a generous amount of shredded cheese on top, and cover with another slice of bread. Repeat for all sandwiches.

Grill the Sandwiches: In the same skillet, add the remaining butter or olive oil. Grill the sandwiches over medium heat, pressing down gently with a spatula, for about 3-4 minutes on each side, or until the bread is golden brown and the cheese has melted.

Serve: Remove the sandwiches from the skillet and let them cool slightly. Slice in half and serve warm. Top with avocado slices, sliced tomatoes, or a drizzle of hot sauce if desired.
