Sweet Corn & Tomato Salad

2 cups fresh sweet corn (or 1 can, drained)

2 cups cherry tomatoes, halved (mix of red and yellow for color)

1 small red onion, finely chopped

1 avocado, diced

1/4 cup fresh cilantro, chopped

1/4 cup fresh basil, chopped

2 tablespoons olive oil

1 tablespoon lime juice

1 teaspoon honey (adjust based on sweetness preference)

Salt and pepper to taste

Optional: 1/4 cup crumbled feta cheese

Prepare the Corn: If using fresh corn, bring a pot of water to a boil. Add the corn and cook for about 5-7 minutes until tender. Drain and let cool. If using canned corn, simply drain and rinse under cold water.

    Mix the Base: In a large mixing bowl, combine the sweet corn, halved cherry tomatoes, finely chopped red onion, and diced avocado.

      Add the Herbs: Sprinkle in the freshly chopped cilantro and basil. The herbs add a vibrant flavor that complements the sweetness of the corn and tomatoes.

        Make the Dressing: In a small bowl, whisk together olive oil, lime juice, honey, salt, and pepper. Taste and adjust seasoning if necessary.

          Combine: Pour the dressing over the corn and tomato mixture. Gently toss to combine all the ingredients without mashing the avocado.
