Ingredients

2 cups rolled oats

2 medium apples, diced (preferably Granny Smith or Honeycrisp)

1 cup almond milk (or any milk of your choice)

1/2 cup honey (or maple syrup for a vegan option)

1/4 cup unsweetened applesauce

1/4 cup almond butter (or peanut butter)

1 tsp vanilla extract

1 tsp ground cinnamon

1/2 tsp nutmeg

1/2 tsp baking powder

1/4 tsp salt

1/2 cup chopped nuts (e.g., walnuts or pecans, optional)

1/4 cup raisins or dried cranberries (optional)

Extra sliced apples for topping

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and lightly grease a 9x9-inch baking dish or line it with parchment paper.

Prepare the Oat Mixture: In a large mixing bowl, combine the rolled oats, baking powder, cinnamon, nutmeg, and salt. Mix well to ensure the ingredients are evenly distributed.

Mix the Wet Ingredients: In a separate bowl, whisk together the almond milk, honey, applesauce, almond butter, and vanilla extract until smooth and well combined.

Combine Mixtures: Pour the wet mixture into the dry oat mixture, stirring until just combined. Fold in the diced apples, nuts, and dried fruit (if using). Make sure everything is evenly coated.

Assemble the Bake: Pour the mixture into the prepared baking dish. Spread it out evenly, then layer additional sliced apples on top for decoration.

Bake: Bake in the preheated oven for 30-35 minutes, or until the oat bake is set and the tops are golden brown.

Cool and Serve: Allow to cool for about 10-15 minutes before slicing into squares. Serve warm, drizzled with extra honey if desired.

Storage: Leftovers can be stored in an airtight container in the refrigerator for up to 4 days. Reheat in the microwave before serving.
