Ingredients
  

1 cup almond milk (or any milk of your choice)

1/2 cup chia seeds

1 ripe mango, diced

2 tablespoons maple syrup (or honey for preference)

1 teaspoon vanilla extract

A pinch of salt

Toasted coconut flakes (for topping)

Fresh mint leaves (for garnish)

Instructions
 

In a medium mixing bowl, combine the almond milk, chia seeds, maple syrup, vanilla extract, and a pinch of salt. Whisk well to combine and ensure there are no clumps of chia seeds.

    Let the mixture sit for about 10 minutes. After this time, whisk again to break up any clumps that may have formed.

      Cover the bowl with plastic wrap or transfer the mixture to individual jars. Refrigerate for at least 3 hours, or overnight for best results. The chia seeds will swell and create a pudding-like consistency.

        Once the pudding is ready, give it a good stir. Layer half of the chia pudding into serving glasses.

          Add half of the diced mango on top of the pudding layer.

            Top with the remaining chia pudding and then add the rest of the mango on top.

              Finish by sprinkling toasted coconut flakes over the mango layer and garnish with fresh mint leaves.

                Serve immediately or keep in the refrigerator for up to 2 days for a quick grab-and-go breakfast.
