Sweet Potato & Spinach Bake

2 large sweet potatoes, peeled and thinly sliced

3 cups fresh spinach, washed and chopped

1 cup ricotta cheese

1/2 cup feta cheese, crumbled

2 cloves garlic, minced

1 cup shredded mozzarella cheese

1/2 teaspoon nutmeg

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon olive oil

1/2 cup vegetable broth

1 teaspoon fresh thyme (or 1/2 teaspoon dried thyme)

Optional: Pine nuts or walnuts for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sauté Spinach: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Then, add the chopped spinach and cook until wilted (about 2-3 minutes). Remove from heat and let it cool slightly.

      Prepare Ricotta Mixture: In a bowl, combine the ricotta cheese, feta cheese, nutmeg, salt, pepper, and thyme. Add the sautéed spinach to this mixture and mix thoroughly until well combined.

        Layer Sweet Potatoes: Spread a thin layer of vegetable broth on the bottom of a greased 9x13 inch baking dish. Arrange half of the sweet potato slices in an even layer over the broth.

          Add Cheese Mixture: Spoon half of the spinach and cheese mixture over the sweet potato layer. Sprinkle 1/3 of the mozzarella cheese on top.

            Repeat Layers: Add another layer of sweet potatoes, followed by the remaining spinach and cheese mix, and finish with the last layer of sweet potatoes. Pour the remaining vegetable broth over the top layer and sprinkle with the rest of the mozzarella cheese.

              Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes. Then, remove the foil and bake for an additional 15-20 minutes, or until the sweet potatoes are tender and the cheese is bubbly and golden.

                Garnish and Serve: Let the bake cool for a few minutes before serving. If desired, sprinkle with toasted pine nuts or walnuts for added crunch.
