Ingredients

For the BBQ Chicken:

2 cups shredded cooked chicken (rotisserie works great)

1 cup BBQ sauce (your favorite variety)

1 tablespoon apple cider vinegar

1 teaspoon smoked paprika

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

For the Nachos:

10-12 ounces tortilla chips

1 1/2 cups shredded cheese (cheddar, Monterey Jack, or a blend)

1 cup black beans, rinsed and drained

1/2 cup corn (canned or frozen)

1 jalapeño, thinly sliced (optional)

1/4 cup red onion, finely chopped

1/4 cup fresh cilantro, chopped

1 avocado, diced

Sour cream, for serving

Additional BBQ sauce, for drizzling

Instructions

Prepare the BBQ Chicken:

    - In a medium bowl, combine the shredded chicken, BBQ sauce, apple cider vinegar, smoked paprika, garlic powder, and onion powder. Toss until the chicken is well-coated. Set aside to marinate for about 15 minutes.

      Preheat the Oven:

        - Preheat your oven to 400°F (200°C).

          Assemble the Nachos:

            - On a large baking sheet, spread out the tortilla chips in a single layer. Evenly distribute the seasoned BBQ chicken over the chips. Sprinkle the black beans and corn on top, followed by the shredded cheese. Add jalapeño slices if using.

              Bake:

                - Place the baking sheet in the preheated oven and bake for 10-12 minutes, or until the cheese is melted and bubbly.

                  Garnish:

                    - Remove the nachos from the oven and immediately sprinkle with chopped red onion and fresh cilantro. Add the diced avocado for a creamy touch.

                      Serve:

                        - Serve the nachos hot with a dollop of sour cream and a drizzle of additional BBQ sauce on the side.
