Teriyaki Chicken Rice Bowls

1 lb boneless, skinless chicken thighs or breasts, cut into bite-sized pieces

1 cup jasmine rice

2 cups water or chicken broth

1 tablespoon vegetable oil

1 cup broccoli florets (fresh or frozen)

½ cup sliced bell peppers (red or green)

½ cup sliced carrots

2 green onions, chopped

1 sesame seed garnish (optional)

For the Teriyaki Sauce:

¼ cup soy sauce

2 tablespoons honey or brown sugar

2 tablespoons rice vinegar

1 tablespoon mirin (optional)

1 teaspoon garlic, minced

1 teaspoon ginger, minced

1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)

Instructions
 

Cook the Rice: In a medium saucepan, combine the jasmine rice and water or chicken broth. Bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes or until the liquid is absorbed. Remove from heat and let it sit covered for 5 minutes before fluffing with a fork.

    Prepare the Teriyaki Sauce: In a small saucepan, combine soy sauce, honey, rice vinegar, mirin, garlic, and ginger. Bring to a simmer over medium heat. Once simmering, stir in the cornstarch mixture and cook for an additional 2-3 minutes until the sauce thickens. Remove from heat and set aside.

      Cook the Chicken: Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the chicken pieces and cook for about 7-10 minutes, stirring often until the chicken is cooked through and nicely browned.

        Add the Vegetables: Once the chicken is cooked, add the broccoli, bell peppers, and carrots to the skillet. Stir-fry for an additional 5-7 minutes until the vegetables are tender-crisp.

          Combine: Pour the teriyaki sauce over the chicken and vegetable mixture. Stir well to coat everything evenly and cook together for another 2 minutes.
