2 cups cooked shredded chicken (rotisserie chicken works great)

1 can (15 oz) black beans, rinsed and drained

1 cup corn (frozen or canned, drained)

1 cup mild salsa

1 teaspoon ground cumin

1 teaspoon chili powder

1 teaspoon garlic powder

1/2 teaspoon smoked paprika

8 small flour tortillas

2 cups shredded Monterey Jack cheese

1 cup shredded cheddar cheese

1/2 cup sour cream

Fresh cilantro for garnish (optional)

Sliced jalapeños for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Filling: In a large mixing bowl, combine the shredded chicken, black beans, corn, salsa, cumin, chili powder, garlic powder, and smoked paprika. Mix until all the ingredients are well combined.

      Assemble the Tortillas: Lay out the flour tortillas on a clean countertop. Spoon about 1/4 cup of the chicken mixture onto each tortilla and roll them up tightly. Place the rolled tortillas seam-side down in a greased 9x13 inch baking dish.

        Layer the Sauce: Once all the tortillas are placed in the dish, pour any remaining salsa over the top. Spread it evenly to cover all the enchiladas.

          Add Cheese: Sprinkle half of the Monterey Jack cheese and half of the cheddar cheese over the top of the enchiladas.

            Bake It: Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Then, remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden brown.

              Serve: Remove the dish from the oven and allow it to cool for a few minutes. Drizzle sour cream over the top and garnish with fresh cilantro and sliced jalapeños if desired.
