1 lb (450g) beef sirloin or flank steak, thinly sliced

2 cups fresh Thai basil leaves, packed

3 tablespoons vegetable oil

4 cloves garlic, minced

2-3 Thai bird's eye chilies, sliced (adjust for heat preference)

1 red bell pepper, sliced

1 medium onion, sliced

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon fish sauce

1 tablespoon brown sugar

1 teaspoon cornstarch (optional, for thickening)

1 tablespoon water (if needed for thickening)

Steamed jasmine rice, for serving

Lime wedges, for garnish

Instructions
 

Prep the Ingredients: Before cooking, prepare all the ingredients by slicing the beef, vegetables, and mincing garlic and chilies. Having all ingredients ready will make cooking quicker and easier.

    Marinate the Beef: In a bowl, combine the sliced beef with 1 tablespoon soy sauce, 1 teaspoon cornstarch (if using), and a pinch of black pepper. Let it marinate for about 15-20 minutes while you prepare other ingredients.

      Heat the Wok: In a large wok or skillet, heat 2 tablespoons of vegetable oil over high heat until shimmering. Ensure the oil is hot but not smoking for the best sauté.

        Cook the Aromatics: Add the minced garlic and sliced Thai bird's eye chilies to the hot oil. Stir-fry for about 30 seconds, or until fragrant, being careful not to burn the garlic.

          Stir Fry the Beef: Quickly add the marinated beef to the wok in a single layer. Allow it to sear without stirring for about a minute, then stir-fry until just browned and cooked through, around 2-3 minutes. Push the beef to one side of the wok.

            Add Vegetables: In the cleared space, add the sliced onions and red bell pepper. Stir-fry for another 2-3 minutes until the vegetables are tender but still crisp.

              Combine Ingredients: Stir everything together in the wok. Then, add the remaining 1 tablespoon soy sauce, oyster sauce, fish sauce, and brown sugar. Toss well to coat all the ingredients.

                Finish with Basil: Just before serving, add the fresh Thai basil leaves and toss them with the mixture for about 30 seconds, allowing them to wilt while infusing flavor into the dish.

                  Plate and Serve: Serve hot over steamed jasmine rice. Garnish with lime wedges on the side for an extra zesty kick.
