3 cups rolled oats

1 cup unsweetened shredded coconut

1/2 cup sliced almonds

1/2 cup honey or maple syrup

1/4 cup coconut oil, melted

1/2 teaspoon vanilla extract

1/2 teaspoon sea salt

1 teaspoon ground cinnamon

1 cup mixed dried fruits (such as cranberries, apricots, or banana chips)

Instructions
 

Preheat the Oven: Preheat your oven to 325°F (160°C). Line a large baking sheet with parchment paper.

    Combine Dry Ingredients: In a large mixing bowl, combine the rolled oats, shredded coconut, sliced almonds, sea salt, and ground cinnamon. Mix well until all dry ingredients are evenly distributed.

      Mix Wet Ingredients: In a separate bowl, whisk together the melted coconut oil, honey (or maple syrup), and vanilla extract until fully combined.

        Combine Wet and Dry Mixtures: Pour the wet mixture into the dry ingredients and stir until everything is evenly coated. Make sure all the oats are well mixed with the wet ingredients.

          Form Clusters: Transfer the mixture onto the prepared baking sheet, pressing it down firmly with the back of a spatula. This will help create clusters as it bakes.

            Bake: Bake in the preheated oven for about 25-30 minutes, or until the granola is golden-brown. Halfway through the time, give it a stir to ensure even toasting.

              Cool and Add Fruits: Once done, remove from the oven and let it cool completely on the baking sheet. Once cooled, break it into clusters and mix in your choice of dried fruits.

                Store: Transfer your granola clusters into an airtight container. They will last for up to two weeks.
