Ingredients

1 cup elbow macaroni

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

1 cup whole milk

1 cup shredded sharp cheddar cheese

½ cup grated Gruyère cheese

2 tablespoons truffle oil (adjust to taste)

Salt and pepper to taste

1 teaspoon garlic powder

1 teaspoon onion powder

½ cup breadcrumbs (preferably panko for extra crunch)

2 tablespoons chopped fresh parsley (for garnish)

Optional: extra truffle oil for drizzling

Instructions

Cook the Pasta:

In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

      Make the Cheese Sauce:

In the same pot, melt the unsalted butter over medium heat. Whisk in the flour to create a roux; cook for about 1-2 minutes until golden. Slowly pour in the whole milk while continuously whisking to prevent lumps. Cook until the mixture thickens, about 4-5 minutes.

          Add the Cheeses:

Reduce the heat to low and stir in the sharp cheddar cheese and Gruyère cheese until fully melted and smooth. Stir in the truffle oil, garlic powder, onion powder, and season with salt and pepper to taste.

              Combine Pasta and Sauce:

Add the cooked macaroni to the cheese sauce and mix well until all the pasta is evenly coated.

                  Prepare for Baking:

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper. Using a cookie scoop or spoon, portion the mac and cheese mixture into small, bite-sized mounds and place them on the prepared baking sheet.

                      Coat with Breadcrumbs:

Sprinkle the panko breadcrumbs evenly over each mac and cheese bite, pressing down gently to help them adhere.

                          Bake:

Bake in the preheated oven for about 15-20 minutes or until the tops are golden brown and crispy.

                              Serve:

Once baked, remove from the oven and let cool for a few minutes. Drizzle with extra truffle oil if desired and garnish with chopped parsley before serving.

Enjoy your indulgent Truffle Mac and Cheese Bites — the ultimate gourmet comfort food!
