Ingredients

2 ripe avocados

1 can (5 oz) of tuna, drained (preferably packed in water)

1/4 cup Greek yogurt (or may substitute with mayonnaise)

1 tablespoon Dijon mustard

1 tablespoon lemon juice (freshly squeezed)

1/4 cup red onion, finely chopped

1/4 cup celery, finely diced

1-2 tablespoons fresh dill, chopped (or 1 teaspoon dried dill)

Salt and black pepper to taste

Cherry tomatoes, halved (for garnish)

Optional: lettuce leaves for serving

Instructions

Prepare the Avocados: Start by cutting the avocados in half lengthwise and removing the pit. Scoop out a small portion of the flesh to create a larger cavity for the filling (set the extra avocado aside for later).

Make the Tuna Salad: In a mixing bowl, combine the drained tuna, Greek yogurt, Dijon mustard, lemon juice, red onion, celery, dill, and a pinch of salt and pepper. If you've reserved some avocado flesh, you can mash it and mix it into the salad for added creaminess.

Taste and Adjust: After thoroughly combining all ingredients, taste the mixture and adjust seasoning as needed, adding more lemon juice or dill to enhance flavor.

Fill the Avocado Boats: Spoon the tuna salad mixture generously into each avocado half, packing it lightly but ensuring it's nicely mounded on top.

Garnish: Top the filled avocados with halved cherry tomatoes for a pop of color and a burst of freshness. Optional: Serve on a bed of lettuce leaves for added crunch and presentation.

Serve: Enjoy immediately or chill briefly before serving to enhance the flavors. These Tuna Avocado Salad Boats make for a perfect light lunch, snack, or appetizer!
