8 oz (225 g) rotini pasta

1 can (5 oz) tuna in water, drained (or 2 fresh tuna steaks, grilled and flaked)

1 cup cherry tomatoes, halved

1/2 cup cucumber, diced

1/3 cup red onion, finely chopped

1/4 cup black olives, sliced

1/4 cup fresh parsley, chopped

1/3 cup mayonnaise

2 tablespoons Greek yogurt (for creaminess)

1 tablespoon lemon juice (freshly squeezed)

1 teaspoon Dijon mustard

Salt and pepper, to taste

Optional: 1/4 teaspoon red pepper flakes (for a kick!)

Cook the Pasta: In a large pot of salted boiling water, cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside to cool completely.

    Prep the Veggies: While the pasta is cooling, prepare the vegetables. Halve the cherry tomatoes, dice the cucumber, chop the red onion, and slice the olives. Place all these ingredients in a large mixing bowl.
