Turkey Bacon Breakfast Quesadillas

4 large flour tortillas

8 slices of turkey bacon

1 cup shredded cheddar cheese

1 cup scrambled egg mixture (about 4 large eggs, beaten)

1/2 cup diced bell peppers (any color)

1/4 cup finely chopped green onions

2 tablespoons olive oil

1 teaspoon ground black pepper

1 teaspoon garlic powder

Salt to taste

Optional toppings: sour cream, salsa, or avocado slices

Instructions
 

Cook the Turkey Bacon: In a skillet over medium heat, add the turkey bacon and cook until crispy, about 6-8 minutes. Remove from the skillet and let it drain on a paper towel. Once slightly cooled, chop into bite-sized pieces.

    Scramble the Eggs: In the same skillet, add a little olive oil if needed, and pour in the beaten eggs. With a spatula, gently stir the eggs occasionally until they are fully cooked. Season with salt, black pepper, and garlic powder. Remove from heat.

      Prepare the Filling: In a large bowl, combine the chopped turkey bacon, scrambled eggs, diced bell peppers, and green onions. Mix well to evenly distribute the ingredients.

        Assemble the Quesadillas: Heat a clean skillet over medium-low heat and lightly brush with olive oil. Place one tortilla in the skillet and sprinkle half of the shredded cheddar cheese evenly across it. Spoon part of the turkey bacon and egg mixture on one half of the tortilla, then fold the other half over the top.

          Cook the Quesadilla: Cook for about 3-4 minutes until the bottom is golden brown, then carefully flip and cook for another 3-4 minutes until the cheese is melted and the other side is golden. Repeat with the remaining tortillas and filling.

            Serve: Remove the quesadillas from the skillet and let them cool for a minute before slicing them into wedges. Serve warm with optional toppings like sour cream, salsa, or avocado slices.
