4 cups fresh corn kernels (about 5-6 ears of corn) or 2 cans of corn, drained

1 red bell pepper, diced

1 cup cherry tomatoes, halved

1/2 red onion, finely diced

1 avocado, diced

1/4 cup fresh cilantro, chopped

Juice of 2 limes

1-2 teaspoons chili powder (adjust to taste)

1 teaspoon smoked paprika

Salt and pepper to taste

1 tablespoon olive oil (optional)

Prepare the Corn: If using fresh corn, husk the ears and remove the kernels using a sharp knife. Boil or grill the kernels for 2-3 minutes until slightly tender, then cool. If using canned corn, simply drain and rinse.

    Mix the Vegetables: In a large mixing bowl, combine the corn kernels, diced red bell pepper, halved cherry tomatoes, and finely diced red onion.

      Add the Avocado: Carefully fold in the diced avocado, taking care not to mash it too much.

        Season the Salad: In a small bowl, whisk together the lime juice, chili powder, smoked paprika, salt, and pepper. Drizzle the olive oil (if using) for added richness.
