Ingredients
  

4 large whole grain or spinach tortillas

1 cup hummus (any flavor)

1 cup shredded purple cabbage

1 cup grated carrots

1 bell pepper (red, yellow, or orange), thinly sliced

1 cucumber, peeled and julienned

1 avocado, sliced

1 cup mixed greens (spinach, arugula, or baby kale)

¼ cup fresh cilantro or parsley, chopped

Juice of 1 lime

Salt and pepper to taste

Optional: ¼ cup feta cheese, crumbled

Instructions
 

Prep the Vegetables: Rinse and dry all fresh vegetables. Thinly slice the bell pepper, peel and julienne the cucumber, and grate the carrots. Slice the avocado just before assembly to prevent browning.

    Make the Base: Lay a tortilla flat on a clean cutting board. Spread a generous layer of hummus over the entire surface, leaving a small border around the edges.

      Layer the Crunch: Begin layering the vegetables over the hummus in the following order: shredded purple cabbage, grated carrots, sliced bell pepper, julienned cucumber, and mixed greens.

        Add the Avocado: Place slices of avocado on top of the mixed greens, followed by a sprinkle of fresh cilantro or parsley, and a squeeze of lime juice to enhance the flavors. Season with salt and pepper, and if desired, sprinkle feta cheese for an extra zing.

          Wrap it Up: Starting from the edge closest to you, carefully roll the tortilla over the fillings, tucking the sides in as you go to secure the contents. Continue rolling until the wrap is fully enclosed.
